What is Chia Pudding?
Chia seeds might be tiny, but they are packed with nutrition! Rich in protein, omega-3s, and fiber, these little seeds expand up to four times their size when soaked in liquid, creating a pudding-like consistency with a slight crunch. When you sweeten it with maple syrup and mix it with your milk of choice, you get a versatile and healthy treat that’s perfect for any time of day.

Chia Pudding:
- Chia seeds: The base of our pudding. I like to get my chia seeds from Costco as I find they are well priced for the quantity and value.
- Milk: Serves as the liquid which is absorbed by the chia pudding, yielding a pudding-like creamy texture. Choose any dairy or non-dairy milk. Add more or less to adjust the pudding’s consistency.
- Maple syrup: Sweetens the pudding naturally. You can substitute this with honey or agave.
- Vanilla extract: Adds a lovely vanilla/floral flavor to the pudding.
- Salt: To balance out the sweetness from the syrup and enhance the overall flavors.
Toppings:
- Peanut butter: Feel free to go with smooth or chunky peanut butter. You can substitute the peanut butter with any other nut or seed butter.
- Strawberry Jam: I use store-bought jam but you can use homemade if you prefer. You can also substitute with blueberry or raspberry jam.
- Fresh berries: I always try to start my day with fresh fruit. You can go with just strawberries or any combination of fresh berries of your choosing.
How to Make PB&J Chia Pudding:
Start by whisking together chia seeds, milk, vanilla extract, and maple syrup in a bowl.
Let the mixture sit for at least 20 minutes, then whisk again to ensure there are no chia seed clumps.
Cover and refrigerate for at least 2 hours, or ideally overnight, to allow the chia seeds to fully absorb the liquid and create a thick, pudding-like texture.
Assemble your chia pudding by pouring into individual jars and topping with jam, fresh fruit, and peanut butter.
Another fun option is to layer the peanut butter and jam in between layers of chia pudding, then top with fresh berries and more peanut butter and jam.
Once you’re ready to enjoy your chia pudding, remove the set pudding containers from the fridge and serve. The chia pudding can be stored in the refrigerator in airtight containers to savor throughout the week!
