Ingredients
- 1 tbsp olive oil
- 1 slice of sourdough bread
- 2 tbsp chili oil
- 1 egg
- 3 tbsp guacamole or 1/2 avocado mashed
- 1/2 tsp toasted sesame seeds
- Green onion slices
Instructions
- Drizzle olive oil over both sides of your bread and toast in the pan under medium low heat until golden on both sides (Alternatively, you can toast the bread in a toaster)
- Remove and add chili oil to the pan. Crack the egg over the chili oil. Once the eggs have just started to set, tilt the pan and spoon some of the oil over the yolks of the egg to cook.
- Spread guacamole or mashed avocado over your toasted bread, then top with the cooked chili oil egg. Garnish with sesame seeds and green onions. Serve immediately.
