PB&J Chia Pudding

PB&J Chia Pudding is a delicious twist on the classic peanut butter and jelly combo, packed with protein, fiber, and omega-3s. This easy-to-make breakfast or snack layers creamy chia pudding with peanut butter, strawberry jam, and fresh berries. Perfect for meal prep and sure to keep you satisfied throughout the day!

Ingredients
  

CHIA PUDDING

  • 1/2 cup chia seeds
  • 2 cups milk of choice
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup

TOPPINGS

  • 2 cups strawberries chopped or sliced (about 12 strawberries)
  • 1/2 cup peanut butter
  • 1/3 cup strawberry jam

Instructions
 

  • Add chia pudding, milk, vanilla, and maple syrup to a bowl.
  • Whisk then let sit for at least 20 minutes and whisk again to ensure there are no chia seed clumps.
  • Cover and refrigerate for at least 2 hours (preferably overnight).
  • Assemble your chia pudding by pouring into individual jars and topping with peanut butter, jam, and fresh fruit. Alternatively, you can layer the peanut butter and jam in between layers of chia pudding, then top with fresh berries and additional peanut butter and jam.
  • Serve right away or store in the refrigerator to be enjoyed over the next few days.
