Marinate the chicken: Combine yogurt, olive oil, lemon juice, garlic, and spices in a bowl. Add chicken and mix well. Let it marinate for at least 2 hours or overnight for best results.
Preheat and prep: Preheat oven to 400°F. Thread marinated chicken onto skewers.
Bake: Place skewers on a parchment-lined baking sheet. Bake for 20-25 minutes, flipping halfway through, until the chicken reaches an internal temp of 165°F.
Serve: Plate over warm rice and drizzle with your choice of sauce. Add a side salad or roasted veggies to round out the meal.
How long can I store leftovers? Store cooked chicken skewers in an airtight container in the fridge for up to 3 to 4 days. Reheat in the microwave or oven until warmed through (165°F).
Can I freeze them? Yes! Let the skewers cool completely, then wrap tightly and freeze for up to 3 months. Defrost overnight in the fridge before reheating.
Can I cook these in the air fryer? Absolutely. Air fry at 375°F for 10-12 minutes, or until the internal temperature reaches 165°.
Do I have to use skewers? Not at all! You can bake the marinated chicken pieces directly on a sheet pan or in a baking dish.
Can I use chicken thighs or breasts? Yes, chicken thighs work great and are often even juicier. Be sure to slice the meat into bite-sized pieces before threading onto the skewers.
What sides go well with chicken skewers? Rice, flatbread, roasted veggies, cucumber salad, or even wrapped in a pita with tzatziki.
