Lemon Garlic Chicken Skewers (Perfect for Meal Prep)

Ingredients
  

  • 8 pieces chicken tenderloins
  • 8 wooden skewers soaked in water for at least 30 minutes
  • 1/4 cup fresh chopped parsley to garnish* optional

FOR THE LEMON GARLIC MARINADE

  • 1 cup Greek yogurt
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 1 tbsp minced garlic
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 1 tsp oregano

Instructions
 

  • Add the tenderloins into a large bowl along with the ingredients for the lemon garlic marinade. Mix well and let it sit covered for at least 2 hours or overnight in the refrigerator.
  • Thread each tenderloin lengthwise onto the wet skewer and lay them out in a single layer on a baking pan.
  • Bake at 400 degrees Fahrenheit for 20-25 minutes or until internal thermometer reaches 165 degrees.
  • Garnish with fresh chopped parsley* (optional) and serve immediately.
