We enjoy our Costco salmon filets for dinner then use up the leftovers to be thrown into a quick creamy salmon pasta the next day. Don’t you just love it when one meal can be repurposed for another?
Lemon Garlic Baked Salmon
Ingredients
- 2 lbs Costco salmon filets
- 2 lemons
- 1/4 cup olive oil
- 1 tbsp garlic, minced
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried parsley
Instructions
- Preheat oven to 375 degrees F.
- In a small bowl or measuring cup, combine olive oil, garlic, and the juice of one lemon.
- Line your baking pan with foil and lay out your fish. Drizzle marinade over the fish and sprinkle with salt and pepper.
- Slice up your other lemon into 1/2" rounds and place over the fish. Sprinkle dried parsley over the whole thing and cover with foil. Use an additional sheet of foil if needed to ensure the fish is fully enclosed.
- Bake for 15-20 minutes or until fish is easily flaked with a fork (bake time may vary depending on the thickness of your fish).
