Preheat oven to 375 degrees F.
In a small bowl or measuring cup, combine olive oil, garlic, and the juice of one lemon.
Line your baking pan with foil and lay out your fish. Drizzle marinade over the fish and sprinkle with salt and pepper.
Slice up your other lemon into 1/2" rounds and place over the fish. Sprinkle dried parsley over the whole thing and cover with foil. Use an additional sheet of foil if needed to ensure the fish is fully enclosed.
Bake for 15-20 minutes or until fish is easily flaked with a fork (bake time may vary depending on the thickness of your fish).
