Snickers were a staple treat during my childhood, but I’ve reached a stage in my life where I am seeking snacks that not only feel indulgent but also fuel my body.
Enter: Healthy Snickers Date Bars. They’ve got that perfect combo of creamy peanut butter, sweet dates, rich chocolate, and a little crunch from crushed peanuts. All the best elements of the nostalgic chocolate bar, but without the sugar crash.
They take just 6 ingredients, no baking, and a few minutes of prep. Better yet–they’re naturally sweetened, high in protein, and made with ingredients you probably already have in your pantry.
If you’re tempted to grab any ol’ package of dried date from the store, let me stop you right there: it’s just not the same unless you’re using Medjool dates. I get my medjool dates from Costco but you should be able to find them at your local supermarket.
Medjool dates are big, soft, and almost caramel-like in flavor—which makes them the perfect natural base for these Healthy Snickers Bars. Their rich, chewy texture mimics nougat or caramel (no wonder why they call it “nature’s candy”). They’re sticky enough to hold the peanut butter in place without falling apart.
Other types of dates (like Deglet Noor) are firmer, smaller, and a bit drier. They’re great for baking, but not ideal for stuffing or replicating that classic candy bar vibe. So for the best results, make sure you’re using fresh Medjool dates—the kind that feel soft to the touch and don’t require soaking.
💡 Tip: If your Medjool dates feel a little firm, just soak them in hot water for a few minutes to soften them up before filling.
Start by lining a small baking tray or plate with parchment paper. This keeps the bars from sticking.
Slice each Medjool date open (but don’t cut all the way through), and stuff with about 1 tsp of peanut butter. Press them slightly closed.
Use a double boiler method:
Bring 2 inches of water to a simmer in a pot, then place a heat-safe bowl over the top with your chocolate chips and coconut oil. Stir with a spatula until smooth and melted.
No double boiler? Microwave the chocolate and coconut oil in 20-second increments, stirring in between until melted.
Use a fork to dunk each stuffed date into the melted chocolate. Let the excess drip off, then place it on the parchment paper.
Sprinkle the tops with crushed peanuts and a pinch of flaky salt.
Transfer the tray to the freezer and let everything set for at least 1 hour. Once firm, enjoy immediately or store in freezer safe container or storage bags for later.
The date bars will be frozen solid when you take them out of the freezer. Let sit out at room temperature for about 10 minutes so they can soften before biting into them.
These are perfect to make on Sunday night and stash for the week. Total sweet tooth satisfaction with zero guilt.
