Healthy Snickers Date Bars (High-Protein, No-Bake Snack Recipe)

These healthy Snickers date bars are a no-bake, high-protein snack made with peanut butter, dark chocolate, and Medjool dates. Perfect for meal prep and sweet cravings!

Ingredients
  

  • 12 medjool dates with pits removed
  • 1/3 cup peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • 1/4 cup chopped peanuts
  • 2 tsp flaky salt

Instructions
 

  • Line a baking pan with parchment paper
  • Stuff the pitted dates with about 1 tsp of peanut butter per date.
  • Use a double boiler to melt the chocolate. Fill a small pot with about 2 inches of water and bring to a boil. Add the chocolate chips and coconut oil to a bowl that is large enough to sit over the pot without touching the water. Use a small silicon spatula to mix the chocolate and coconut oil as it melts. Once the chocolate has melted, turn off the heat and remove the bowl.
  • Dip each stuffed date in the melted chocolate using a fork to shake off any excess chocolate.
  • Place the chocolate-covered dates back on the parchment paper. Top with crushed peanuts and season with flaky salt.
  • Place dates in the freezer for about an hour to solidify. Once they have been individually frozen, you can store them in a freezer safe container or storage bag.

Notes

**The date bars will be frozen solid when you take them out of the freezer.  Allow date bars to sit out at room temperature for about 10 minutes so they can soften before biting into them.
