Here’s one way to repurpose Costco’s shrimp cocktail to make spring rolls. This eliminates the extra step of having to cook your shrimp so all you have to do is prepare the vegetables. I like thinly slice carrots, cabbage, and lettuce but feel free to add whatever vegetables you prefer or have on hand. You can also substitute the shrimp with other proteins including pork, chicken, beef, or tofu.
I like to lay out all the ingredients out on the table and provide everyone with their individuals bowls for a DIY spring rolls dinner situation. If you want a more filling spring roll, add vermicelli rice noodles for extra bulk.
My favorite sauce to enjoy these spring rolls with is peanut sauce. Sesame sauce is another great alternative for those who have a peanut allergy. You can make it similarly to the peanut sauce but use Chinese sesame paste instead of peanut butter. Be careful to read the ingredients on the bottle carefully, however, as some brands add peanut into their sesame paste.
Lastly, don’t skip the herbs. I used cilantro and mint and love the way they add freshness and zing to the spring rolls.

Shrimp Spring Rolls
Ingredients
- 12 fully cooked and peeled Costco shrimp
- 1 carrot cut into matchsticks (or julienned)
- 1 wedge red cabbage, thinly sliced
- 1 avocado thinly sliced
- 2 cups lettuce, thinly sliced
- 6-8 sprigs fresh cilantro and mint
- 8 sheets Vietnamese rice paper large size
Peanut Dipping Sauce
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp agave or maple syrup or honey
- 2 tbsp lime juice
- 2 tsp sriracha hot sauce
- 4 tbsp water (plus more depending on how thick your peanut butter is)
Instructions
- Add all the peanut sauce ingredients to a bowl and mix until blended. Set aside.
- Slice your cooked shrimp in half lengthwise and set aside along with the chopped vegetables and herbs.
- Prepare a bowl of warm water and a flat surface such as a cutting board. Dip the dry rice paper into the bowl by holding it up with both hands and wetting along the sides. Once all sides are wet, lay the rice paper flat. Do not submerge the entire rice paper into the water at once as it will crumble up and be very difficult to manipulate.
- Start assembling your roll by layering the avocado, carrots, and lettuce about 1.5" up from the bottom edge of your rice paper.
- Fold in the sides of the rice paper then roll the bottom of the rice paper over the vegetables, then roll again and add a layer of the cilantro and mint. Roll again then add 3 pieces of shrimp before completing your final roll.
- Enjoy with homemade peanut sauce.
