Start by boiling your small potatoes in salted water for about 15 minutes or until fork tender. Drain and let them cool slightly.
In a large bowl, mix together melted butter, olive oil, salt, pepper, garlic powder, onion powder, paprika, and oregano. Set aside about 3 tablespoons of this buttery mixture for basting.
Add your cooked potatoes to the bowl and toss to coat. Line a baking pan with parchment paper or a silicone mat and arrange the potatoes in a single layer.
Using the bottom of a glass or bowl, gently press each potato down until it’s about ½ inch thick. For crispier potatoes, press them even thinner.
