This Apple Pomegranate Salad with Balsamic Dressing is one of my go-to recipes when I want something light but still satisfying. It also looks way fancier than it really is and can easily be incorporated into a holiday spread, even though it’s ridiculously easy to throw together.
You’ve got crisp apple slices, creamy avocado, tangy feta (or mozzarella if that’s more your thing), and crunchy pumpkin seeds—all tossed in a super simple, homemade balsamic dressing. Oh, and let’s not forget the pomegranate seeds, which add the perfect pop of sweetness. Let’s make it!
The dressing is super simple but packs so much flavor. Here’s how to do it:

FOR THE SALAD
-2 cups spring mix
-2 cups baby arugula
-1 small apple, thinly sliced
-1 avocado, diced
