EggLife wraps are also made from cage free eggs and not flour, making them grain free! They are dairy free as well. Pair them with some gochujang chicken and lettuce, and you got yourself a flavorful and protein packed meal!
Ingredient Substitutions For Gochujang Chicken
Shaoxing wine
Feel free to use mirin or rice wine vinegar instead of shaoxing wine. I just find that mirin tends to have a sweeter taste!
Monkfruit sweetener
I used monkfruit sweetener to keep the gochujang chicken low sugar and low carb, but feel free to use regular sugar or any sweetener of choice. Of all the sugar substitutes out there, I personally prefer monkfruit sweetener as I find it has doesn’t leave a harsh, artificial aftertaste.
Japanese kewpie mayo
If you don’t have Japanese kewpie mayo, you can use regular mayo. Japanese kewpie mayo is creamier as it uses only egg yolks, whereas regular mayo is made with whole eggs.
Other ways to enjoy EggLife Wraps
Besides making gochujang chicken lettuce wraps, here are some more recipe ideas you can try:
- Tuna wraps
- Ground beef or chorizo with cheese, salsa, and avocado
- Turkey BLT
- Loaded nachos (slice the wraps into triangles, spray with oil and bake to make egg white chips)

EggLife Gochujang Chicken Wraps
Ingredients
- 4 EggLife Everything Bagel Egg White Wraps
- 4 tbsp Japanese kewpie mayo
- 8 butter lettuce leaves
- 3 boneless skinless chicken thighs
- 2 tbsp avocado or other flavorless oil (e.g. canola, vegetable)
- Sliced green onions and sesame seeds to garnish
For the Gochujang Marinade
- 1/4 cup gochujang (Korean red pepper paste)
- 1 tbsp garlic minced
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp monkfruit sweetener (you can use regular sugar or other sweetener of choice)
- 1/2 tbsp sesame oil
Instructions
- Combine ingredients for gochujang marinade in a medium bowl and mix. Add chicken thighs and mix thoroughly. Let chicken sit in marinade for at least 10 minutes.
- Add oil to a heated pan and cook chicken thighs on medium heat. Cook for 5 minutes on each side to get a nice, golden sear on both sides. Reduce heat to medium low and cover with lid for an additional 5 minutes or until the meat reaches an internal temperature of 165 degrees.
- Remove chicken from heat and allow the meat to rest covered for about 5 minutes. Meanwhile, you can toast your egg white wraps by heating them on a non-stick or cast iron pan for 30 seconds on each side.
- Once the meat has rested, cut into ½” slices.
- Evenly spread one tbsp of kewpie mayo on each toasted egg white wrap, then top with 2 leaves of butter lettuce. Add the sliced chicken over the lettuce then garnish with sesame seeds and sliced green onion.
