Chicken Teriyaki Meatball Lettuce Wraps with Peanut Sauce
Lettuce Wraps using pre-cooked chicken teriyaki meatballs from Costco. Enjoy with a simple Thai peanut sauce dressing.

Ingredients
For the peanut sauce
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp agave syrup or sweetner of choice
- 2 tbsp lime juice
- 2 tsp chili garlic sauce or sriracha hot sauce
- 4 tbsp water Add additional 1 tbsp at a time until you reach desired consistency
Instructions
- Heat meatballs according to package instructions.
- Chop carrots and bell peppers and place on a small plate or tray.
- In a small bowl, mix together all ingredients for the Thai peanut sauce. Set aside.
- Add about spoonful of cooked rice to a leaf of butter lettuce. Top with a meatball, carrots, bell pepper, and desired amount of cilantro. Drizzle with peanut sauce and sriracha and enjoy!
