Chicken Teriyaki Meatball Lettuce Wraps with Peanut Sauce

Lettuce Wraps using pre-cooked chicken teriyaki meatballs from Costco. Enjoy with a simple Thai peanut sauce dressing.

Ingredients
  

  • 1 Package of pre-cooked chicken teriyaki meatballs Aidells and Amylu brands available at Costco
  • 2 cups carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 4 cups cooked rice
  • 1 bunch fresh cilantro
  • sriracha hot sauce *optional
  • 2-3 heads butter lettuce

For the peanut sauce

  • 1/3 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 2 tbsp agave syrup or sweetner of choice
  • 2 tbsp lime juice
  • 2 tsp chili garlic sauce or sriracha hot sauce
  • 4 tbsp water Add additional 1 tbsp at a time until you reach desired consistency

Instructions
 

  • Heat meatballs according to package instructions.
  • Chop carrots and bell peppers and place on a small plate or tray.
  • In a small bowl, mix together all ingredients for the Thai peanut sauce. Set aside.
  • Add about spoonful of cooked rice to a leaf of butter lettuce. Top with a meatball, carrots, bell pepper, and desired amount of cilantro. Drizzle with peanut sauce and sriracha and enjoy!
