Freezer burritos are a lifesaver for anyone with a busy schedule and these days, that pretty much includes all of us (Am I right?). I like to use Costco rotisserie chicken as it eliminates the additional step of cooking the chicken and ensures I can prepare an entire batch of freezer burritos in under an hour. Whenever you are in need of a quick meal, simply reheat them in the microwave for 60 seconds on each side.
These burritos are filled with flavorful chicken, vibrant veggies, and a rich, cheesy sauce, making them the perfect quick meal for any time of day.
Ingredients:
- Rotisserie chicken
- Oil
- Bell pepper
- Black beans
- Chipotle peppers in adobo sauce
- Cream cheese
- Shredded cheddar cheese
- Pre-cooked large flour tortillas
Taco Seasoning Blend:
- Garlic powder
- Onion powder
- Chili powder
- Smoked paprika
- Cumin
- Oregano
- Coriander
- Salt
Directions:
Prepare the Chicken and Seasonings:
- Debone and skin the rotisserie chicken. Chop or pull apart the meat into bite-sized pieces. If you prefer to cook the chicken yourself in place of using store-bought rotisserie chicken you can do so!
- Prepare the taco seasoning by mixing the spices together in a bowl.
Make the Burrito Filling:
- Heat oil in a pan, add diced bell peppers, and sauté. Mix in black beans and taco seasoning.
- Stir in canned chipotle peppers and tomato sauce and let the mixture simmer.
- Mix in cream cheese until well combined, then take it off the heat and add the chicken. Mix to ensure the chicken is well coated with the sauce.
- Let the filling cool before assembling the burritos.
Assemble and Freeze:
Scoop the filling onto each tortilla, add cheese and additional toppings if desired (I added fresh chopped onions and cilantro to half of the burritos). Fold and roll up the burritos then wrap in wax paper or foil (You can also use parchment paper).
Freeze the wrapped burritos in a large zip-lock bag and label with today’s date.
How to Reheat:
- Microwave: Unwrap and microwave each burrito for about 2 minutes, flipping halfway through.
- Stovetop: Thaw overnight, then crisp on a skillet with a little oil.
- Oven: Bake in a preheated oven at 350°F for about 20 minutes.
- Air Fryer: Cook at 350°F for about 8 minutes, flipping halfway through.

Homemade Freezer Burritos
Ingredients
- 1 rotisserie chicken bones and skin removed (about 4 cups of meat)
- 2 tbsp oil
- 1 cup bell pepper diced
- 1 can of black beans
- 1 7 oz can of chipotle peppers in adobo sauce
- 1 cup tomato sauce
- 3 oz cream cheese
- 2.5 cups of shredded cheddar cheese
- 8 pre-cooked large flour tortillas
TACO SEASONING BLEND
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp chili powder
- ½ tbsp smoked paprika
- ½ tbsp cumin
- 1 tsp oregano
- ½ tsp coriander
- 1 tsp salt
Instructions
PREP YOUR CHICKEN AND SEASONINGS
- Remove the bones and skin from the rotisserie chicken and set aside. Chop or break apart the larger pieces of meat so everything is bite-sized.
- Add all the ingredients for the Taco Seasoning blend to a small bowl and set aside.
MAKE THE BURRITO FILLING
- Add oil to a large pan and heat on medium high. Add bell peppers and cook for about 3 minutes until they have started to soften, then add beans and spices for the Taco Seasoning Blend. Saute for about a minute then add chipotle peppers in adobo sauce and cook for about 3 minutes or until the sauce begins to simmer. Use the edge of your wooden spoon to break apart the chipotle peppers.
- Add cream cheese and mix until it has fully incorporated into the sauce. Take the mixture off the heat and let it cool for a few minutes then add the cooked chicken. Mix until the chicken is well coated with the creamy sauce and your burrito filling is complete.
ASSEMBLE THE BURRITOS
- Add a scoop of the filling towards the bottom half of the burrito along with about 1/2 cup of shredded cheese and any additional toppings you'd like to add.
- Fold the sides of the tortilla over the filling. Next fold the bottom flap then roll upwards while continuing the tuck in the sides of the tortilla with your fingers.
- Lay a sheet of wax/parchment paper or foil on a diagonal then wrap up the burrito. Continue until all your burrito filling has been used, then add the burritos into a large zip loc bag and store in the freezer.
