A wholesome and refreshing treat
These wholesome and satisfying Pomegranate Yogurt Popsicles are one of my favorite ways to treat myself at the end of the day. They’re a refreshing way to beat the heat during summer months but can be enjoyed all year round. The pomegranate juice offers antioxidant goodness and you get protein from the Greek yogurt. It’s a treat you can feel good about feeding yourself and your family, and it tastes amazing too!
What you need
- 100% juice: I like to use POM Wonderful 100% Pomegranate juice for it’s flavor and antioxidant goodness, but you can use any juice you’d like for this recipe.
- Yogurt: This recipe uses Greek yogurt as it offers a high amount of protein per serving. I find Greek yogurt by itself to be very thick and almost chalky, so I like to thin it out with a little milk. If using regular yogurt, no need to add the milk as the consistency is already loose. Just substitute the milk with additional yogurt.
- Honey: If using plain yogurt, sweeten with honey, agave syrup, or maple syrup to your desired level of sweetness. No need to add honey if your yogurt is already sweetened.
- Popsicle molds: I recommend stainless steel molds as they take less time to chill, but any popsicle molds will do. I got my stainless steel popsicle molds from Amazon.
Pomegranate Yogurt Popsicles
Equipment
- 1 popsicle mold
Ingredients
- 1 cup Pomegranate juice
- 1 cup Greek yogurt
- 1/4 cup milk to loosen the Greek yogurt
- 2 tbsp agave syrup or any sweetener of choice (e.g. honey)
Instructions
- Add the Greek yogurt, milk, and honey to a small bowl and mix.
- Fill the popsicle molds by layering pomegranate juice and yogurt mixture. Freeze for at least 5-6 hours or until fully frozen.
