Turkey Pumpkin Chili Recipe (Healthy and Hearty Fall Dinner)

Ingredients
  

  • 1 tbsp olive oil
  • 1.5 lb ground turkey
  • 1 onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 15 oz can pumpkin puree
  • 1 28 oz can crushed tomatoes
  • 2 15 oz cans beans (black, kidney, or pinto), drained and rinsed
  • 2 cups chicken stock

FOR THE SEASONING BLEND

  • 2.5 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp paprika
  • 2 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Heat oil in a large pot. Sauté onion, bell pepper, and garlic 3–4 minutes.
  • Add ground turkey and cook until browned.
  • Stir in tomato paste and seasonings (chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper). Cook 1 minute.
  • Add pumpkin puree, crushed tomatoes, beans, and chicken stock. Stir to combine.
  • Bring to a boil, then simmer 30 minutes until thickened.
  • Serve hot with your favorite toppings: cheese, avocado, sour cream, cilantro, and raw diced onion.
