- 1 tbsp olive oil
- 1.5 lb ground turkey
- 1 onion diced
- 1 red bell pepper diced
- 3 cloves garlic minced
- 2 tbsp tomato paste
- 1 15 oz can pumpkin puree
- 1 28 oz can crushed tomatoes
- 2 15 oz cans beans (black, kidney, or pinto), drained and rinsed
- 2 cups chicken stock
FOR THE SEASONING BLEND
- 2.5 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp garlic powder
- 1 tbsp onion powder
- ½ tbsp paprika
- 2 tsp salt
- ½ tsp black pepper
Get Recipe Ingredients
Heat oil in a large pot. Sauté onion, bell pepper, and garlic 3–4 minutes.
Add ground turkey and cook until browned.
Stir in tomato paste and seasonings (chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper). Cook 1 minute.
Add pumpkin puree, crushed tomatoes, beans, and chicken stock. Stir to combine.
Bring to a boil, then simmer 30 minutes until thickened.
Serve hot with your favorite toppings: cheese, avocado, sour cream, cilantro, and raw diced onion.
