Ginger Citrus Salad Dressing

Ingredients
  

  • 1 large carrot, roughly chopped about 3/4 cup
  • 1/4 cup white onion, roughy chopped
  • 1/2 large orange (peeled then chopped) about 1/2 cup
  • 1 tbsp lemon juice about 1/2 lemon
  • 1/4 cup apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp minced ginger
  • 1/8 tsp black pepper
  • 2 tbsp honey or agave syrup
  • 3 tbsp flavorless oil like canola, vegetable, or avocado oil

Instructions
 

  • Add all ingredients to a blender and blend until you achieve a smooth consistency
  • Drizzle dressing over your salad and pour the leftovers in an airtight jar or container to use throughout the week
