PREPARE THE SALAD DRESSING
- Combine ingredients for the balsamic dressing into a small mason jar and give it a good shake until it has emulsified. Alternatively, you can add all the ingredients minus the olive oil into a bowl and whisk until well combined. Slowly drizzle in the olive oil with one hand while continuing to whisk with the other until the dressing has emulsified.
ASSEMBLE THE SALAD
- To a large bowl, add mixed greens and arugula. Top with the sliced apples, cheese, avocados, pumpkin seeds, and pomegranate seeds over the bed of greens. Drizzle with dressing over the top and serve.
