I love how pound cake is like a blank canvas that you can embellish to turn into whatever your heart (or stomach) desires.
This Costco pound cake can be found in the bakery section and comes in a pack of three loaves for $7.99. You can enjoy them fresh and freeze whatever is leftover. I recommend slicing them and wrapping the individual slices in saran wrap before storing in the freezer.
This is a super easy no-bake dessert that comes together quickly. It’s great for entertaining as it’s fancy enough to serve to guests and can be customized with your favorite sauces and flavors. I took the traditional route with chocolate sauce and ice cream but really, the world is your oyster. You can top with homemade whipped cream and strawberries for a take on strawberry shortcake, or layer with lemon curd and blueberries for a sweet and tart summer dessert. Grilled Pound Cake Sundaes
Materials
- 4 slices pound cake Sliced into 1.5" pieces
- 1/4 cup raw almonds
- 1/2 cup semi-sweet chocolate chips
- 1 cup fresh raspberries and/or other fresh fruit
- 4 scoops vanilla ice cream
- 4 sprigs fresh mint to garnish Optional
Instructions
- Add your raw almonds onto a baking tray and bake at 300 degrees Fahrenheit for 10 minutes. Take out the tray halfway through and give the tray a gentle shake to ensure the almonds cook on both sides. Once they are done cooking, remove the tray from the oven and allow to fully cool (about 20 minutes) before chopping.
- Slice your Costco pound cake into 1.5" slices
- To make your chocolate sauce, add about 1/4 cup of semi-sweet chocolate chips and 1 tbsp of milk to a microwave-safe bowl. Microwave at 15 second intervals until chocolate is fully melted. Use a spoon to stir the chocolate in between each interval.
- Lay pound cake slices on a hot grill or grill pan for about a minute on each side until grill marks form and the cake is toasted and place in a bowl or plate.
- Add a scoop of vanilla ice cream on top of each cake slice. Drizzle the chocolate sauce over the ice cream then add the roasted nuts. Add some fresh berries and garnish with fresh mint before serving.
