In a small saucepan, add water and sugar and cook on medium low heat, stirring continuously until the sugar is completely dissolved (about 5 minutes). Set aside and allow to cool and store in a glass container.
Fill a tall glass 1/2 way with ice. Add lemon juice and simple syrup.
Add strawberries to a lemon squeezer to squeeze out the liquids from the strawberries into the cup then add the strawberries into the cup as well.
Fill the rest of the glass with water and add mint sprigs. Stir and serve.
