avocado oil
or neutral oil with high smoke point

butter

rosemary sprigs
or herbs of choice

garlic cloves
smashed and peeled

Instructions
Bring steaks to room temperature, blot dry, and season generously with salt and pepper.
Heat 2 tbsp oil in a large pan over medium-high. Place steaks gently in pan, pressing lightly for even browning. Cook 1 minute.
Flip and cook the other side 1 minute. Continue flipping every minute until steaks are 10°F below target doneness.
Reduce heat to low, add butter, garlic, and herbs. Baste steaks until they reach your desired cook temperature.
Remove steaks from pan and rest 5–10 minutes.
Drizzle with pan sauce, garnish with flaky salt, and serve.
