Korean Soy Braised Chicken (Jjimdak)

This Korean soy braised chicken (jjimdak) is a cozy one-pot dish made with tender chicken, veggies, chewy noodles, and a bold soy-based sauce.

Equipment

Ingredients
  

  • 2 lbs chicken drumsticks and/or thighs
  • 1 cup potatoes peeled and chopped
  • 1 cup carrots chopped
  • 1/2 onion chopped
  • 2 green onions chopped
  • 4 oz sweet potato noodles (Korean glass noodles)* optional
  • 4 oz rice cakes* optional

PREPARE THE SAUCE

  • Add all the ingredients for the sauce into a small bowl. Mix and set aside.

ADD INGREDIENTS TO THE POT

  • Add chicken and sauce to the pot. Bring everything to a boil and reduce the heat to medium cook with the lid covered for 8 minutes.
  • Add potatoes, carrots, and onions cover and cook for an additional 8 minutes.
  • Add the sweet potato noodles and chopped green onions, and cook for 3 minutes.
  • Lastly, add the rice cakes and cook for four minutes.

GARNISH AND SERVE

  • Garnish with toasted sesame seeds and sliced green onions. Serve with rice.
