Instructions
Heat oil in a large pot. Sauté onions until caramelized, 5–6 minutes.
Add carrots and water. Bring to a boil, cover, and simmer 20 minutes.
Stir in curry roux, using a sieve if needed to avoid clumps.
Add peas and corn. Simmer 5 minutes until thickened.
Cook udon according to package instructions. Drain well.
Serve curry sauce over udon noodles, tossing lightly to coat.
