Japanese Style Beef Curry Udon Noodles Recipe

These Japanese beef curry udon noodles are cozy and hearty. Chewy udon noodles are coated in thick curry roux sauce with beef and veggies — ready in 40 minutes.

Ingredients
  

  • 1 tbsp avocado oil
  • 1 lb beef chuck roast cut into ½-inch cubes
  • 1.6 oz Japanese curry roux half a box
  • 1 small onion thinly sliced
  • 1 large carrot chopped
  • ¾ cup frozen peas
  • ¾ cup frozen corn
  • 5 cups water
  • 4 servings udon noodles fresh, frozen, or dried

Instructions
 

  • Heat oil in a large pot. Sauté onions until caramelized, 5–6 minutes.
  • Add carrots and water. Bring to a boil, cover, and simmer 20 minutes.
  • Stir in curry roux, using a sieve if needed to avoid clumps.
  • Add peas and corn. Simmer 5 minutes until thickened.
  • Cook udon according to package instructions. Drain well.
  • Serve curry sauce over udon noodles, tossing lightly to coat.
