- 1 tbsp avocado oil
- 1 lb beef chuck roast cut into ½-inch cubes
- 1.6 oz Japanese curry roux half a box
- 1 small onion thinly sliced
- 1 large carrot chopped
- ¾ cup frozen peas
- ¾ cup frozen corn
- 5 cups water
- 4 cups cooked rice

Heat oil in a large pot. Add onions and sauté until caramelized, 5–6 minutes.
Add carrots and water. Bring to a boil, cover, and simmer for 20 minutes.
Stir in curry roux, breaking it up with a sieve to prevent clumps.
Add peas and corn. Simmer 5 minutes until thickened.
Serve hot over rice or udon noodles.
