Japanese Beef Curry with Rice Recipe

This Japanese style beef curry with rice is cozy, hearty, and easy to make using curry roux. A comforting family dinner ready in just 40 minutes.

Ingredients
  

  • 1 tbsp avocado oil
  • 1 lb beef chuck roast cut into ½-inch cubes
  • 1.6 oz Japanese curry roux half a box
  • 1 small onion thinly sliced
  • 1 large carrot chopped
  • ¾ cup frozen peas
  • ¾ cup frozen corn
  • 5 cups water
  • 4 cups cooked rice

Instructions
 

  • Heat oil in a large pot. Add onions and sauté until caramelized, 5–6 minutes.
  • Add carrots and water. Bring to a boil, cover, and simmer for 20 minutes.
  • Stir in curry roux, breaking it up with a sieve to prevent clumps.
  • Add peas and corn. Simmer 5 minutes until thickened.
  • Serve hot over rice or udon noodles.
