Make this cozy and flavorful Asian Chicken Noodle Soup in just 20 minutes! With tender chicken thighs, noodles, garlic, ginger, and broccoli, this easy soup recipe is the perfect quick weeknight dinner.
Season chicken on both sides with salt, pepper, and Chinese five spice powder. Add oil to a heated pot and cook chicken for 3–4 minutes until browned on both sides.
Remove chicken from pot. Add garlic, ginger, and the white parts of green onion. Sauté for 1 minute, then pour in chicken stock.
Bring to a boil, then reduce heat and simmer for 10 minutes.
While broth simmers, cook noodles in a separate pot. Drain and set aside. Chop chicken into bite-sized pieces.
