This Costco Pumpkin Pie Hack turns a $5.99 store-bought pie into two no-bake desserts! Inspired by a social media trend and Sandra Lee’s semi-homemade style, these mini pumpkin pies and chocolate-covered pumpkin pie bites make the perfect easy, last-minute holiday dessert.

Ingredients
  

  • 1 Costco Pumpkin Pie
  • 1 cup whipped cream
  • 1 tsp cinnamon
  • 6 Biscoff cookies halved
  • 1 cup melted chocolate
  • Optional: sea salt flakes or crushed Biscoff crumbs

Instructions
 

  • Use a 2–3 inch biscuit cutter to press out mini pumpkin pies. If they stick, gently push them through with your fingers.
  • Top each with about 1 tbsp whipped cream, cinnamon, and a Biscoff cookie half.
  • Blend leftover pie scraps until smooth
  • Roll into 1-inch balls and freeze for about 2 hours
  • Dip in melted chocolate.
  • Refrigerate until chocolate sets.
  • Garnish with sea salt flakes or crushed Biscoff crumbs
  • Serve both desserts together for a festive, no-fuss holiday spread.
