Carrot Salad

- 3 whole carrots thinly sliced into ribbons
- ¼ cup of fresh cilantro chopped
- ¼ cup peanuts chopped
- 2 tsp soy sauce
- ½ tbsp toasted sesame oil
- ½ tbsp maple syrup or sweetener of choice Other options include agave syrup, honey, monkfruit sweetener, or simply sugar.
- 1 tbsp rice vinegar: You can substitute with mirin or plain vinegar
- 1 minced garlic clove: Mince finely using a knife garlic press, or simply grate it in.
- 1 tsp hemp seeds *optional
- 1 tsp toasted sesame seeds brown or black sesame seeds
- Salt and pepper to taste
Get Recipe Ingredients
Place carrot ribbons to a large bowl.
Add soy sauce, toasted sesame oil, maple syrup, rice vinegar, and garlic.
Mix using tongs until the carrots are evenly coated with the sauce.
Season with salt and pepper to taste.
Add peanuts and cilantro and mix again.
Garnish with sesame seeds.
Serve immediately.
