Baked Burrata and Tomatoes with Pesto

Ingredients
  

  • 4 oz burrata
  • 1 lb cherry tomatoes
  • 6 cloves garlic, peeled and whole
  • 1/3 cup olive oil
  • 1/3 cup pesto
  • 1/4 tsp red pepper flakes (*optional)
  • 2 tbsp honey
  • salt and pepper to taste

Toasted baguette slices

  • 1 loaf baguette, sliced
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions
 

  • Pre-heat oven to 400 degrees Fahrenheit
  • To an oven-safe baking pan or cast iron pan, add tomatoes and garlic. Drizzle with olive oil and season with salt, pepper, and red pepper flakes (*optional)
  • Add dollops of pesto over the tomatoes and garlic. Bake for 40 minutes.
  • Remove pan from oven and place 2 to 3 burrata balls over the pan. Drizzle a little olive oil over the burrata balls and season with salt and pepper, then drizzle with honey.
  • Enjoy with crusty bread on the side.

Baked baguette slices

  • Lay sliced baguettes on a baking pan and drizzle with olive oil on both sides. Alternatively, you can add about 1/4 cup of olive oil to a small bowl and use a basting brush to spread the olive oil evenly on both sides of the baguette slices. Season with salt and pepper.
  • Bake at 350 degrees Fahrenheit for 8 minutes, flipping halfway through.
