Equipment

  • Steaming pot (with steamer basket/insert, or stovetop steamer)
  • Blender, food processor, or immersion blender
  • Freezer-safe cube tray
  • knife
  • Chopping board

Ingredients

  • 2 cups cauliflower chopped
  • 1 cup red bell pepper chopped
  • 1 small zucchini chopped
  • 1 cup carrots chopped

Instructions

  • Steam the vegetables. Add the cauliflower, bell pepper, zucchini, and carrots to a pot and steam until fork tender.
  • Blend until smooth. Let the vegetables cool slightly, then blend using a blender, food processor, or immersion blender until smooth.
  • Freeze in portions. Pour the blended veggies into a freezer-safe cube tray and freeze until solid.
  • Reheat and serve. Pop out the frozen veggie cubes into a microwave-safe bowl and microwave in 20-second intervals until no longer frozen and slightly warm. Serve as is, or stir into pasta, rice, or shredded meat for an easy nutrition boost.

Notes

  • Customize freely — swap in any vegetable that steams and blends well, like sweet potato, peas, spinach, butternut squash, or broccoli.
  • Use a freezer tray for clean-release, perfectly portioned cubes.
  • Store frozen cubes in the tray or transfer to a freezer-safe bag/container once solid; keeps well in the freezer for up to 2 months
  • To reheat, microwave in 20-second intervals until no longer frozen and slightly warm.
