Carrot Salad

Ingredients
  

  • 3 whole carrots thinly sliced into ribbons
  • ¼ cup of fresh cilantro chopped
  • ¼ cup peanuts chopped
  • 2 tsp soy sauce
  • ½ tbsp toasted sesame oil
  • ½ tbsp maple syrup or sweetener of choice Other options include agave syrup, honey, monkfruit sweetener, or simply sugar.
  • 1 tbsp rice vinegar: You can substitute with mirin or plain vinegar
  • 1 minced garlic clove: Mince finely using a knife garlic press, or simply grate it in.
  • 1 tsp hemp seeds *optional
  • 1 tsp toasted sesame seeds brown or black sesame seeds
  • Salt and pepper to taste

Instructions
 

  • Place carrot ribbons to a large bowl.
  • Add soy sauce, toasted sesame oil, maple syrup, rice vinegar, and garlic.
  • Mix using tongs until the carrots are evenly coated with the sauce.
  • Season with salt and pepper to taste.
  • Add peanuts and cilantro and mix again.
  • Garnish with sesame seeds.
  • Serve immediately.
