Skillet potatoes and potato hash are very popular breakfast dishes in American and British cuisine. Many of us enjoy gravitating towards breakfast potatoes and eggs when we are thinking about a hearty breakfast or brunch, but who said you can’t have it for lunch and dinner too?
This recipe for skillet potato hash with eggs has a great combination of protein, carbohydrates, and vegetables to make a great meal any time of the day.
And as an added bonus, you only need one skillet and you can serve it in the same skillet!
Some notes for the skillet potatoes recipe:
You can use any kind of potato you like! There are red and white potatoes, and small or regular sized. Sweet potato hash is also a very common and tasty way to make skillet potatoes.

This skillet potatoes recipe is meatless. However, you can also add your own choice of meat to your skillet such as:
- Chorizo
- Ground beef/pork/turkey
- Ham
- Bacon
- Sausage
Skillet Potatoes and Eggs
Ingredients
- 4-5 small potatoes chopped into 1 inch cubes
- 1/2 medium onion chopped
- 1/2 red bell pepper chopped
- 1 tbsp garlic minced
- 1 jalapeno pepper thinly sliced
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp black pepper
- 4 large eggs
- 3/4 cup cheddar cheese
- 2 tbsp avocado oil or any neutral flavored oil
- Dried or fresh parsley to garnish
- Hot sauce optional
Instructions
- Bring a pot of water to boil and chop your vegetables.
- Cook the chopped potatoes in salted boiling water for 3 minutes. They may be slightly underdone but they will continue to cook in the skillet.
- Add oil to a hot skillet and cook onions and bell peppers under medium heat. Let the vegetables sit for a few minutes without mixing to develop a nice char. Once onions and bell peppers are just cooked (about 5 minutes), add in jalapenos and garlic. Saute for just a minute until the garlic is golden.
- Add potatoes and seasonings to the pan and mix until everything is well coated.
- Use a spoon or spatula to create four small wells in the pan and crack in the eggs. Top with cheese and season with black pepper.
- Close lid and reduce heat to low. Allow everything to cook with lid covered until the eggs are done to your liking (about 6-8 minutes for set whites with runny yolk).
- Garnish with parsley and add a few dashes of hot sauce before eating.
