Healthy Homemade Protein Gummies (Just 4 Ingredients!)

A simple 4-ingredient protein gummy made with apple juice, gelatin, honey, and lemon — real, whole-food protein from gelatin rather than protein powder, easy enough to make with kids, and satisfying enough to be an anytime snack for adults too.

Ingredients

  • 3 cups apple juice
  • 3 tbsp beef gelatin
  • 3 tbsp honey
  • Juice of half a lemon (about 2 tbsp)
  • 1 tsp olive oil (or any neutral, non-flavored oil)

Instructions

  • Bloom the gelatin. In a medium bowl, whisk 1 cup of apple juice together with the 3 tbsp of gelatin until fully incorporated. Set aside for 10–15 minutes to let the gelatin bloom.
  • Heat the remaining juice. Heat the remaining 2 cups of apple juice on the stovetop until hot but not boiling — you want steam rising off the top, but no bubbles. Remove from heat.
  • Combine. Add the bloomed gelatin mixture into the hot apple juice and whisk until fully incorporated and lump-free.
  • Add lemon and honey. Stir in the lemon juice and honey until combined.
  • Skim. Use a spoon to skim off any bubbles or foam that have formed on top.
  • Oil and pour. Rub the olive oil over the inside of an airtight container (or gummy molds) with your fingers so the gelatin releases cleanly. Pour in the mixture, then skim off any remaining bubbles.
  • Set. Cover and refrigerate for at least 4 hours, preferably overnight.
  • Slice and store. Once fully set, slice into individual portions and store in the fridge.

Notes

  • Gets its protein from gelatin, not protein powder — no chalky aftertaste or added fillers.
  • Works with any 100% fruit juice — swap cup for cup.
  • Adjust honey to taste; do not serve honey to babies under 12 months. Maple syrup, sugar, monk fruit, or allulose all work as substitutes.
