Costco pork belly is one of the best deals out there. We usually eat it plain with rice and nori for a simple weeknight meal, but this time we were hosting a special dinner and decided to make chasu alongside a DIY maki handrolls platter made with a variety of fresh Costco produce and miso soup.
Chashu (Japanese Pork Belly)
Ingredients
- 2.5 lbs pork belly About 5 strips from the Costco pack, cut in half
- 1 medium onion thinly sliced
CHASHU SAUCE
- 1/3 cup sake
- 1/4 cup mirin
- 1/3 cup soy sauce
- 2/3 cup water
- 3 tbsp sugar
- 1/2 tbsp grated ginger Or 4-5 slices of ginger coins
Instructions
- Add a tbsp of oil to a hot pan and heat pork belly strips until both sides are golden (about 5 minutes on each side)
- Take pork belly out of the pan and carefully drain out the fat into a small bowl
- Add pork belly back into the pan and add in onions and sauce. Simmer under low heat with lid slightly ajar until sauce reduces and thickens (at least one hour)
- Slice up your chashu and enjoy over a bed of cooked white rice, ramen, etc. Be sure to ladle some of the chashu sauce over the meat before serving.
