This fresh and flavorful Apple Pomegranate Salad with Balsamic Dressing is the perfect light meal or side dish! Made with crisp apples, creamy avocado, crunchy pumpkin seeds, and a tangy homemade balsamic dressing, it’s easy to make and packed with nutrients.

Ingredients

FOR THE SALAD

-2 cups spring mix

-2 cups baby arugula

-1 small apple, thinly sliced

-1 avocado, diced

-1/3 cup soft mozzarella or feta cheese

-1/4 cup pumpkin seeds

-1/3 cup pomegranate seeds

FOR THE BALSAMIC DRESSING

-1/4 cup balsamic vinegar

-1/2 cup extra virgin olive oil

-2 tsp dijon mustard

-1 tbsp honey or sweetener of choice

-2 tbsp lemon juice

-1/2 tsp garlic powder

-1/2 tsp Italian seasoning

-Salt & pepper to taste

Instructions

PREPARE THE SALAD DRESSING

  1. Combine ingredients for the balsamic dressing into a small mason jar and give it a good shake until it has emulsified.  Alternatively, you can add all the ingredients minus the olive oil into a bowl and whisk until well combined.  Slowly drizzle in the olive oil with one hand while continuing to whisk with the other until the dressing has emulsified.

 

ASSEMBLE THE SALAD

  1. To a large bowl, add mixed greens and arugula. Top with the sliced apples, cheese, avocados, pumpkin seeds, and pomegranate seeds over the bed of greens.  Drizzle with dressing over the top and serve.
