Can I use any store-bought pancake mix?
Krusteaz Buttermilk Pancake Mix yields light and fluffy pancakes every time. Furthermore, all you need to add to it is water which makes it the perfect, stress-free way to start your day. If you don’t have this particular brand of pancake mix you can substitute with any other store-bought pancake mix. Be sure to follow the instructions provided and add any additional ingredients required for that particular mix (e.g. eggs, oil, etc).
Once you have the batter ready, you can add in the hemp seeds, ground flax meal, cinnamon, and pumpkin puree. If the batter feels too thick then add in a little bit of water (about a tablespoon at a time) until you reach a nice thick but pour-able consistency.
What is the difference between pumpkin pie filling and pumpkin puree?
Pumpkin puree consists of only pumpkin without any additional sweeteners or spices. Pumpkin pie filling, however, includes many of the spices that are often found in pumpkin pie recipes such as cinnamon, nutmeg, clove, etc. Pumpkin puree is recommended for this recipe but if you can substitute with pumpkin pie filling if that is all you have. Just be sure to omit the cinnamon since the spices are already added.
What are the nutritional benefits of hemp seeds and ground flax meal?
Hemp seeds are a good source of iron, vitamin E, manganese, magnesium, B-vitamins, zinc, omega-3 and omega-6 fatty acids, and protein. They have a mild and pleasant nutty taste. Flaxseed is a great source of fiber, protein, calcium, magnesium, potassium, Phosphorus, folate, and omega-3 fatty acids. They also offer a subtle nutty flavor which pairs well with pumpkin.
Easy Pumpkin Pancakes (Using Krusteaz Pancake Mix)

- Large bowl
- Measuring cups and spoons
- Cast iron griddle or non-stick pan
- Whisk

Ingredients
- 2 cups Krusteaz Buttermilk Pancake Mix
- 2 tbsp hemp seeds
- 2 tsp ground flax meal
- 1 tsp ground cinnamon
- 1 1/3 plus 1 tbsp of water Add additional water 1 tbsp at a time if batter is too dry
- 1/2 cup pumpkin puree
- 1/4 cup sprouted pumpkin seeds *optional
- 1 cup maple syrup
- 2 tbsp oil
- 2 tbsp butter
Instructions
- In a large bowl, mix pancake mix, hemp seeds, ground flax meal, and cinnamon. Use whisk to combine until everything is well mixed.
- Add in water and pumpkin puree and whisk until everything is just combined (do not overmix). If batter is too dry, add in additional water 1 tbsp at a time until the consistency is pour-able but not watery.
- Heat griddle or non-stick pan under medium low heat and pour or spray enough oil to coat the entire surface. Pour batter according to your preferred pancake size. For smaller pancakes that are about 4 inches in diameter, use about 1/3 cup of batter per pancake.
- Sprinkle pumpkin seeds over the poured batter if desired. Once you start to see small bubbles forming on the surface of the batter, it is time to flip. Allow pancakes to cook for an additional 3-4 minutes then remove from pan and place on a cooling rack until they are ready to serve.
