Sausage and Peppers Pasta

Ingredients
  

  • 2 tbsp olive oil or any neutral oil (e.g. canola, grapeseed, avocado, etc)
  • 20 oz Italian sausage 5 links
  • 1 lb pasta, cooked about a minute under al dente
  • 1 medium onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 1 tbsp minced garlic
  • 2 tsp salt
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1/2 tbsp Italian seasoning
  • 1/8 tsp black pepper
  • 4 tbsp butter
  • 1 cup grated parmesan cheese plus additional for topping
  • 3 tbsp fresh chopped parsley* optional
  • 1 cup reserved pasta water* optional

Instructions
 

  • Add oil to a pan and cook sausage links until the outsides are fully browned. Slice into coins and set aside.
  • Cook pasta about a minute under the package instructions for al dente. Strain and set aside. Reserve a cup of pasta water and set aside.
  • In a heated pan, add oil then saute onions and peppers until the onions are caramelized.
  • Add butter, garlic and seasonings (salt, black pepper, garlic powder, onion powder, and Italian seasoning). Saute until the garlic is toasted and fragrant (about 1-2 minutes).
  • Add cooked pasta and grated parmesan. Mix well. If the pasta feels dry, drizzle in the reserved pasta water while continuing to mix to loosen the pasta.
  • Plate and top with additional grated parmesan and garnish with chopped parsley* (optional).
